Peanut Butter Cookies

Ingredients

  • 1/4 cup honey
  • 1/4 cup rapadura
  • 1/2 cup peanut butter
  • 1/4 cup butter, softened
  • 1 egg, large
  • 1 1/4 cups whole wheat flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • raw sugar (turbinado) or granulated sugar

Directions

1. Mix honey, rapadura (or brown sugar), peanut butter, butter and egg in large bowl. Stir in flour, baking soda, baking powder and salt. Cover and refrigerate about 2 hours or until firm.

2. Heat oven to 375 degrees.

3. Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in criss-cross pattern with fork dipped in granulated sugar.

4. Bake 9-10 minutes or until light brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
